  • Begin by boiling a large pot of salted water. Add your choice of pasta and cook until al dente, reserving 1 cup of pasta water before draining and setting the pasta aside.
  • In a mixing bowl, toss the chopped chicken breasts with the spice mix until evenly coated. Heat a skillet over medium heat and sear the chicken for about 5-6 minutes on each side until fully cooked. Remove the chicken from the skillet and set aside.
  • In the same skillet, add diced onion and bell peppers, sautéing until they become tender. Add minced garlic and continue to cook for another minute until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Lower the heat to prevent the sauce from burning. Stir in the chipotle peppers and allow the sauce to simmer gently.
  • Once the sauce is heated through, add cheddar cheese and stir until fully melted. Next, mix in the Parmesan cheese, honey, and lime juice for added brightness. Incorporate the cooked chicken, asparagus, and peas into the sauce.
  • Finally, add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Serve the pasta immediately, garnishing with additional lime wedges if desired.
