Southwest Chickpea Black Bean Salad Recipe

  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced (any color)

  • 1/4 cup fresh cilantro chopped (optional)

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

  • In a large mixing bowl, combine the chickpeas, black beans, corn, cherry tomatoes, bell pepper, red onion, avocado, and cilantro. Toss gently to mix the ingredients without mashing the avocado.
  • In a separate bowl, whisk together the olive oil, lime juice, honey or maple syrup, cumin, chili powder, garlic powder, salt, and pepper until well combined. Taste the dressing and adjust the seasoning if needed.
  • Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly. If time allows, cover the salad and let it chill in the refrigerator for about 30 minutes to meld the flavors.
  • Serve the salad as a main dish over a bed of greens, as a side with grilled meats or tacos, or as a chunky dip with tortilla chips. Garnish with additional cilantro if desired.
