Cooking Instructions
In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for 5-10 minutes until the vegetables are softened and fragrant.
Stir in the minced garlic, thyme, and bay leaf, cooking for another minute until the garlic is aromatic. Add the tomato paste or canned tomatoes and stir to combine.
