Oven Mashed Potatoes Recipe

  • - 2 pounds baby red potatoes
  • - ½ cup butter
  • - 1 cup half & half warmed
  • - 1 cup chicken stock warmed
  • - Salt to taste

  • - Optional: garlic rosemary, thyme for added flavor

  • Preheat your oven to 400 degrees Fahrenheit. Butter a 9×13 inch pan generously to prevent the potatoes from sticking.
  • Wash and coat the baby Yukon Gold and baby red potatoes in butter, then spread them evenly in the buttered pan.
  • Bake in the preheated oven for 45 to 50 minutes, or until the potatoes are fork-tender. Once baked, remove them from the oven and let them cool slightly.
  • Transfer the potatoes to a large mixing bowl. Using a potato masher, begin to mash the potatoes until they reach your desired consistency.
  • Gradually stir in the warmed half & half and chicken stock, continuing to mash until the mixture is smooth and creamy. Season with salt and pepper to taste.
  • If desired, incorporate additional ingredients such as garlic, rosemary, or thyme to enhance the flavor before serving.
  • For the best results, choose starchy potatoes like Russets or Yukon Golds for a creamy texture. It's also essential to dry the potatoes after baking to avoid excess moisture.
