Cooking Instructions
In a medium-sized bowl, whisk together honey, soy sauce, olive oil, minced garlic, lemon juice, ground ginger, black pepper, and red pepper flakes until well combined.
Place the cubed chicken in a resealable bag or bowl and pour the marinade over the chicken, ensuring it's fully coated. Seal the bag or cover the bowl tightly and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Preheat your grill to medium-high heat, or if using an oven, preheat to 400°F (200°C).
Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking. Reserve any leftover marinade for basting.
If grilling, place the skewers on the grill and cook for 12-15 minutes, turning occasionally and basting with reserved marinade. If baking, arrange the skewers on a baking sheet and bake for 10-12 minutes, broiling for an additional 2-3 minutes for a charred finish.
Once cooked through and the chicken reaches an internal temperature of 165°F (75°C), remove from heat and serve immediately.
For the best results, consider using chicken thighs instead of breasts for added moisture and tenderness. Avoid overcrowding the skewers to ensure even cooking and perfect caramelization.
