Transfer the turkey and vegetable mixture to the prepared baking dish, spreading it evenly. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and sprinkle the shredded cheese evenly over the top. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley or cilantro if desired. Serve hot and enjoy!
