  • Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
  • Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 5-6 minutes until browned and no longer pink. If there is excess fat, drain it off.
  • Stir in the minced garlic, diced bell pepper, cubed sweet potatoes, paprika, oregano, salt, and pepper. Cook for an additional 3-5 minutes, allowing the flavors to meld and the sweet potatoes to slightly soften.
