  • - 2 tablespoons lemon juice
  • - 2 cloves garlic minced

  • - 1 teaspoon fresh cilantro chopped
  • - Salt and pepper to taste
  • - Bell peppers cut into chunks
  • - Red onion cut into chunks
  • - Wooden skewers soaked in water

  • In a large bowl, whisk together the olive oil, soy sauce, honey, lemon juice, minced garlic, thyme, cilantro, salt, and pepper until well combined.
  • Add the cubed chicken to the marinade and toss to guarantee each piece is evenly coated. Cover the bowl and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
  • While the chicken is marinating, soak wooden skewers in water for about 30 minutes to prevent burning on the grill.
  • Preheat the grill or grill pan to medium-high heat and lightly grease the grates to prevent sticking.
  • Thread the marinated chicken, bell pepper chunks, and red onion onto the soaked skewers, alternating between chicken and vegetables for a colorful presentation.
  • Grill the skewers for 5-7 minutes on each side, turning until the chicken is cooked through and has a nice char.
  • Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.
  • For the best results, remember to blot the chicken dry with a paper towel before grilling to promote a better sear. You can also experiment with different vegetables and spices to personalize the dish to your taste.
