Easy Crockpot Chili Recipe

  • - 1 lb ground beef
  • - 1 onion diced
  • - 1 can kidney beans drained and rinsed
  • - 1 can black beans drained and rinsed
  • - 1 can pinto beans drained and rinsed
  • - 1 can diced tomatoes with juices
  • - 2 cups beef broth or vegetable broth
  • - 2 tablespoons chili powder
  • - 1 teaspoon cumin
  • - Optional: bell peppers corn, or other vegetables

  • In a skillet over medium heat, brown the ground beef until it is no longer pink. Drain any excess grease and set aside.
  • In the crockpot, combine the cooked ground beef, diced onion, beans, diced tomatoes, beef broth, chili powder, cumin, and any optional vegetables you choose to add.
  • Stir the mixture well to combine all the ingredients. Cover the crockpot with its lid.
  • Cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Stir occasionally to help the flavors meld and check for doneness.
  • If you prefer a thicker chili, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate. Alternatively, you can mix cornstarch with a little water and stir it into the chili to thicken.
  • Before serving, taste the chili and adjust the seasoning as needed.
  • For best results, remember that chili tastes even better the next day as the flavors continue to develop. Feel free to experiment with different types of beans, spices, or vegetables to make it your own.
  • Additionally, store any leftovers in airtight containers in the fridge for up to 4 days or freeze for up to 3 months, making it a great option for meal prep!
