Easy Bruschetta

  • Fresh basil leaves
  • Optional: mozzarella or Parmesan cheese
  • Baguette or rustic bread

  • Salt and pepper to taste

  • Toast the Bread: Preheat your oven to 450°F (232°C) if you plan to bake the bruschetta. Slice the baguette into 1/2-inch thick pieces and arrange them on a baking sheet. Toast them in the oven for about 5-7 minutes, or until they're golden and crispy. Alternatively, you can broil them for 1-2 minutes on each side for a quicker option.
  • Prepare the Topping: While the bread is toasting, chop the fresh tomatoes and place them in a bowl. Mince the fresh garlic and add it to the tomatoes. Tear or slice the fresh basil leaves and mix them in as well. If using, add any optional ingredients like cheese or finely chopped onion.
  • Season the Mixture: Drizzle the tomato mixture with quality extra virgin olive oil and balsamic vinegar or red wine vinegar. Season with salt and pepper to taste. Stir everything together gently to combine, allowing the flavors to meld.
  • Assemble the Bruschetta: Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the tomato mixture generously on top of each slice of toasted bread. For a melted cheese version, you can top the mixture with cheese and place it back in the oven for an additional 5-10 minutes until the cheese is bubbly.
  • Serve: Transfer the bruschetta to a serving platter and garnish with additional basil leaves if desired. Serve immediately while the bread is still warm and crispy.
