Cooking Instructions
Preheat your oven to 375°F (190°C) or 400°F (200°C) and lightly grease a 9x13-inch baking dish.
In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt and pepper, and sauté for about 6-8 minutes or until the chicken is fully cooked through.
While the chicken is cooking, steam or blanch the cauliflower florets in boiling water for 2-3 minutes (or 5-7 minutes for a softer texture). Drain the cauliflower well to remove any excess moisture.
In a large mixing bowl, combine the cooked chicken, buffalo sauce, and ranch or blue cheese dressing. Stir until all ingredients are evenly coated.
Add the blanched cauliflower to the chicken mixture and gently fold to combine.
Transfer the mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top, followed by the mozzarella cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent overcooking.
Remove from the oven and let it cool slightly before serving.
