Creamy Buffalo Chicken Cauliflower Casserole Recipe

  • 1 lb 450g boneless, skinless chicken breasts, diced
  • 1 head of cauliflower cut into florets
  • 1 cup buffalo sauce
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional garnishes: crumbled blue cheese chopped celery, green onions, fresh parsley or chives

  • Preheat your oven to 375°F (190°C) or 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt and pepper, and sauté for about 6-8 minutes or until the chicken is fully cooked through.
  • While the chicken is cooking, steam or blanch the cauliflower florets in boiling water for 2-3 minutes (or 5-7 minutes for a softer texture). Drain the cauliflower well to remove any excess moisture.
  • In a large mixing bowl, combine the cooked chicken, buffalo sauce, and ranch or blue cheese dressing. Stir until all ingredients are evenly coated.
  • Add the blanched cauliflower to the chicken mixture and gently fold to combine.
  • Transfer the mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top, followed by the mozzarella cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent overcooking.
  • Remove from the oven and let it cool slightly before serving.
  • For a delightful finish, consider garnishing your casserole with crumbled blue cheese, chopped celery, and green onions.
