Chicken Bacon Ranch Potato Bake

Ingredients

  • Ingredients:
  • - 2.5 lbs yellow or red potatoes chopped
  • - 1.5 – 2 lbs boneless skinless chicken breasts or thighs chopped
  • - 8 oz grated sharp cheddar cheese and 4 oz grated smoked gouda cheese
  • - 1 lb cooked crumbled bacon and 1 packet ranch dressing mix

Instructions

  • Instructions:
  • Preheat your oven to 400°F (200°C). Prepare a baking dish by lightly greasing it with cooking spray or oil.
  • In a large pot, bring salted water to a boil. Add the chopped potatoes and cook until tender, about 15-20 minutes. Drain and set aside.
  • In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and drain on paper towels.
  • In a large bowl, combine the cooked potatoes, chopped chicken, crumbled bacon, and ranch dressing mix. Mix until everything is evenly coated.
  • Transfer the mixture into the prepared baking dish and spread it out evenly. Top with the grated cheese.
  • Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  • Allow the dish to cool for a few minutes before serving. Garnish with fresh herbs if desired.
  • For the best results, verify that the potatoes are cooked until just tender before mixing them with the other ingredients. This will help to prevent them from becoming mushy during baking.
  • Additionally, feel free to experiment with different types of cheese or add vegetables like broccoli or bell peppers to enhance the dish further. Enjoy your Chicken Bacon Ranch Potato Bake!
