Chicken Bacon Ranch Casserole Recipe

  • - 8 oz of pasta like rotini, penne, or shells
  • - 1 lb of boneless skinless chicken breast or 4 cups of chopped rotisserie chicken
  • - 8 oz cream cheese
  • - 1 cup milk
  • - 1 packet dry ranch seasoning mix
  • - 4 cups spinach or 2 cups broccoli florets optional
  • - 1 can pimentos drained
  • - 4 green onions chopped
  • - 1 cup mozzarella cheese shredded
  • - 1 cup cheddar cheese shredded

  • Preheat your oven to 375°F. In a 12-inch skillet, cook the bacon over medium heat, stirring often until crispy (about 8 minutes). Once cooked, remove the bacon, crumble it, and set aside.
  • In the same skillet, cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large bowl, combine the cream cheese, milk, and dry ranch seasoning mix, stirring until smooth. Add the cooked pasta, chopped chicken, pimentos, green onions, and any optional vegetables (spinach or broccoli) to the ranch mixture.
  • Transfer the combined mixture to a 13-by-9-inch casserole dish. Evenly sprinkle the crumbled bacon on top, then layer with shredded mozzarella cheese.
  • Bake the casserole in the preheated oven for 25 to 30 minutes, or until the top is golden brown and crispy. Allow the dish to cool slightly before serving, and garnish with additional green onions if desired.
  • For best results when cooking this dish, consider prepping some ingredients in advance, such as chopping vegetables or cooking the pasta.
  • You can also customize the casserole with your favorite pasta shapes or add extra veggies for added nutrition. If you're short on time, using pre-cooked chicken or store-bought Alfredo sauce can speed up the preparation process considerably.
