  • - 2 tablespoons oil olive or vegetable
  • - Panko breadcrumbs optional, for extra crispiness
  • - Buffalo sauce for tossing after baking
  • - Ranch dressing or vegan ranch dressing for serving
  • - Carrot and celery sticks for serving

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Break the cauliflower into large florets, guaranteeing they're similar in size to traditional wings for even cooking.
  • In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  • In another bowl, whisk together the water or nondairy milk with oil. Add this mixture to the dry ingredients and stir until well combined.
  • Toss the cauliflower florets in the batter until fully coated. If using, sprinkle panko breadcrumbs over the coated florets for added crunch.
  • Arrange the cauliflower wings in a single layer on the prepared baking sheet, making sure they aren't touching to allow for proper crisping.
  • Bake in the preheated oven for 10-20 minutes, flipping the cauliflower halfway through to guarantee even cooking and crispiness.
  • Remove the cauliflower from the oven and brush with buffalo sauce. Return to the oven and bake for an additional 10-15 minutes, or until the wings are golden brown and crispy.
  • Once done, remove from the oven and let cool slightly before serving with ranch dressing and fresh veggie sticks.
  • For the best results, keep an eye on the baking time, as it can vary depending on the size of your cauliflower florets and the exact temperature of your oven.
