  • Begin by preparing the tomatoes. Core and dice the ripe tomatoes, then drain any excess juice. In a large bowl, combine the diced tomatoes with the Campari tomatoes, fresh basil, and kosher salt. Allow this mixture to chill for about 30 minutes to let the flavors meld together.
  • While the tomato mixture is chilling, prepare the garlic-infused olive oil and the toasts. Preheat your oven to 400°F. Slice the bread at a slight angle into 1/4-inch thick pieces and arrange them on a baking sheet. Brush both sides of the bread with the garlic-infused olive oil and sprinkle the tops with grated Parmesan cheese.
  • Bake the prepared toasts in the preheated oven for 5 minutes, then switch to broiling on high heat for 1 to 2 minutes or until the edges are golden brown. Keep a close eye on them to prevent burning.
  • Once the toasts are ready, remove them from the oven. Top each crostini generously with the chilled bruschetta mixture. If desired, drizzle with balsamic reduction and sprinkle additional fresh basil on top for garnish.
  • Serve the bruschetta immediately with a drizzle of extra virgin olive oil or balsamic glaze on the side. Enjoy!
