Ingredients
  

  • Ingredients:
  • 1 cup teff
  • 2 cups vegetable broth
  • 1 lb beef or chicken cut into cubes (for mishkaki)
  • 2 tablespoons vegetable oil for grilling
  • 1 tablespoon soy sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bunch collard greens chopped
  • 2 tablespoons olive oil for sukuma wiki
  • 1 onion chopped
  • 2 tomatoes diced
  • 1 tablespoon lemon juice

  • Rinse the teff under cold water and then combine it with vegetable broth in a pot. Bring it to a boil, then reduce the heat to medium-low, cover, and simmer for about 15 minutes, or until the liquid is absorbed and the teff is tender. Fluff with a fork and set aside.
  • In a bowl, combine the beef or chicken cubes with soy sauce, cumin, paprika, minced garlic, salt, and black pepper. Allow the meat to marinate for at least 30 minutes to absorb the flavors.
  • While the meat is marinating, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, then add the diced tomatoes. Cook for about 5 minutes until the tomatoes soften.
  • Stir in the chopped collard greens, cover, and cook for an additional 5 minutes until the greens are wilted. Finish with a splash of lemon juice.
  • Preheat a grill or grill pan over medium-high heat. Thread the marinated meat onto skewers and grill for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  • To serve, place a generous portion of the cooked teff in a bowl, top with the sautéed sukuma wiki, and add the grilled mishkaki skewers on the side.
