  • Begin by rinsing the rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming sticky during cooking.
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, sautéing until they're softened and fragrant.
  • Next, blend the tomatoes and any additional spices you prefer into a smooth puree. Pour this mixture into the pot with the onions and garlic. Stir well and let it cook for about 10-15 minutes until the sauce thickens and the flavors deepen.
  • Add the rinsed rice to the pot, stirring to combine it with the tomato sauce. Pour in the water and season with salt to taste. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the rice is cooked and fluffy. Avoid lifting the lid too often, as this will release steam and can affect the cooking process.
  • Once the rice is cooked, fluff it with a fork and let it sit for a few minutes before serving. You can garnish with additional spices or serve it alongside your choice of protein.
  • For best results, use long-grain rice as it holds its shape better and gives a more appealing texture. Additionally, feel free to customize the dish by adding vegetables, such as peas or bell peppers, or incorporating proteins like chicken or shrimp.
  • The key to a truly flavorful Jollof Rice is to allow the sauce to reduce and concentrate before adding the rice, ensuring that every grain is infused with the rich, spiced goodness of the tomato base.
